Adventures in Cooking with Wheat Germ

Did you know: Wheat germ is rich in protein? In cooked cereals substitute 1/4 cup of wheat germ for 1/4 cup of regular cereal--oatmeal, cream of wheat, corn meal.(in recipes serving six)

In mixes: add 1/4 cup of wheat germ and 2 tablesppoons liquid to ready mixes for breads, muffins, pancakes, etc.

In meats: add 1/4 cup wheat germ to each pound of ground meat for patties, loaves, etc. Season with onion, salt, garlic salt or celery salt. Use in place of crumbs or flour for breading chops, chicken, cutlets, fish, etc.

In casseroles: Saute 1/2 cup wheat germ in four tablespoons butter or margarine. Sprinkle over meat casserole just before baking. If cheese is added, just put it on top or mix grated cheese pr Parmesan cheese with buttered crumbs.

In vegetables: Saute 1/2 cup wheat germ in 4 tablespoons butter or margarine for topping cooked vegetable casseroles. Also delicious sprinkled on vegetables.

Quick and Easy Yeast Rolls

2 pkgs active dry yeast
1/2 cup lukewarm water
1 1/3 cups milk
1/3 cup sugar
1 tablespoon salt
1/4 cup butter or margarine
1 egg, well beaten
4 cup sifted all-purpose flour
1 cup wheat germ

Soften yeast in lukewarm water. Scald milk. In a large bowl, combine milk, sugar, salt and shortening; stir until shortening is melted. Cool to lukewarm. Stir in yeast mixture. Add egg and 2 cups flour; beat until smooth. Stir in remaining flour ane wheat germ knead until it is a smooth, elastic ball. Turn dough into greased bowl, brush top with oil. Cover; store in refrigerator for 2 hours or overnight. Before using, punch dough down to original size. Shape into 1 1/2 inch rolls; place 1/4 inch apart on greased pan. Brush with oil. Cover and let rise in warm place until doubled in bulk. Bake at 400 degrees for 15 minutes.

Wheat Sticks

2 eggs
1/4 cup sugar
2/3 cup milk
1/2 cup butter or margarine
1 1/3 cups sifted all-purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
3/4 cup wheat germ

Beat eggs well; add sugar, milk, melted butter or margarine. Sift together flour, baking powder, salt; stir in wheat germ. Add liquids to dry ingredients. Mix; do not beat. Grease cornstick pans well; heat in hot oven. Fill pans 2/3 full. Bake at 400 degrees for 20 minutes. If desired bacon drippings may be substituted for butter or margarine for a different taste.
