1/4 cup butter
1/4 cup packed brown sugar
3/4 cup finely chopped macadamia nuts
8 ounce can crushed pineapple, undrained
8 ounce pkg cream cheese, softened1/4 cup sugar
1 egg
1 cup flaked coconut
1/2 cup coarsely chopped macadamia nuts
1 Tbsp butter, melted
Preheat oven to 350 degrees. Beat 1/4 cup butter and brown sugar in small mixing bowl at medium speed of mixer until well blended. Add flour and 3/4 cup finely chopped macadamia nuts; mix well. Press onto bottom of a 9 inch square baking pan. Bake for 10 minutes. Cool
Drain pineapple, reserving 2 tablespoons liquid. Beat cream cheese, reserved pineapple juice, granulated sugar and egg in a small mixing bowl at medium speed of a mixer until well blended. Stir in pineapple. Pour over crust. Sprinkle with combined coconut, 1/2 cup coarsely chopped nuts and 1 tablespoon butter. Bake for 18 minutes, cool completely. Cut into bars. Makes about 1 1/2 dozen bars.
