5 pounds of chicken--cut up
3 cups water
1 medium onion, peeled and sliced
Handful of celery tops
1 Tbsp salt
1/4 tsp pepper
1 bay leaf
1/2 cup flour
1 2/3 cups undiluted, evaporated milk
2 cups cooked, sliced carrots
1 pound cooked, small white onions
Recipe for baking powder biscuits
Place chicken in a large kettle with next 6 ingredients. Cover; bring to boiling. Simmer 1 1/2 to 2 hours, or until tender. Remove chicken from broth; cool. Strain broth; cool. Remove chicken from bones; cut into bite size pieces.
Skim fat from broth; measure 1/2 cup fat and 2 1/3 cups broth. (Use only the remaining broth in the soup.) Heat the 1/2 cup fat in a large saucepan; blend in flour; stir in the 2 1/3 cups broth and the milk. Cook, stirring constantly, until sauce thickens; boil 1 minute.
Add chicken, carrots, onions, salt and pepper. Reheat. Pour into a 3 quart baking dish. Arrange uncooked baking powder biscuits over top. ake in a 450 degree oven for 20 - 25 minutes, or until biscuits brown. Makes 6 to 8 servings.
