Vintage Recipe--Stuffing or (as some call it) Dressing


Bread Stuffing:
1/3 cup butter
1/4 cup chopped onion
1/3 cup chopped celery
1/2 tsp salt
1/4 tsp poultry seasoning
Giblets, cooked and chopped
3 to 4 cups soft bread crumbs or cubes
Milk

Melt butter in a skillet. Add onion and celery and cook over low heat until tender but not brown. Add seasoning and giblets. Pour over bread cubes and toss lightly. If a moist stuffing is desired, add milk. This makes enough stuffing for a 4 to 5 pound chicken.
Double the recipe for an 8 to 10 pound turkey; triple it for a turkey weighing 12 to 16 pounds.
