Cooking Class--YEAST BREADS

FANNED LEMON-ORANGE LOAF

Bread:
1 pkg. yeast
1/4 cup warm water
1/4 cup sugar
1/2 cup sour cream
6 tbsp butter, melted
2 eggs
1 tsp salt
2 1/2 to 2 3/4 cups flour

Filling:
1/2 cup sugar
1/2 cup flaked coconut
1 tbsp grated lemon zest
1 tbsp grated orange zest
6 tbsp butter, softened

In large bowl dissolve yeast in warm water. Stir in all remaining bread ingredients except flour. Gradually stir in enough flour to make dough easy to handle. Turn dough onto lightly floured surface; knead until smooth and elastic.  Place in greased bowl; turn greased side up. Cover; let rise in warm place until double in size. Dough is ready if indentation remains when touched. Punch down dough, in medium bowl stir together all filling ingredients except butter. On floured surface roll dough into 20x12 inch rectangle. Spread with 6 tablespoons softened butteer; sprinkle with filling mixture. With sharp knife cut rectangle, crosswise, into 5 strips. Stack five strips evenly on top of each other. Slice stack crosswise through all layers into 6 equal strips. Place layered strips, cut side up, side by side in bottom of greased 9x5 inch loaf pan. Cover; let rise until double in size. Heat oven to 375 degrees. Bake for 30-35 minutes or until golden brown.
