Corn Pone from Kentucky
Corn Pones: Mix 1 cup coarse white corn meal and 1/2 tsp salt. Stir in 1/2 cup boiling water. Add 1 tablespoon melted lard or butter. Put 1/4 teaspoon baking soda in 1/2 cup buttermilk and add to meal mixture. Form into small balls and flatten out on a greased, preheated griddle with the fingers. Bake in a preheated 450 degree oven until brown on one side. Turn and brown on the other side. Makes about 6 small pones. Serve hot with butter. These are delicious with fish, greens, soups or salads.
