Kentucky Spoon Bread

Scald 1 cup corn meal with 1 1/2 cups boiling water.
Add 1 1/2 tablespoons vegetable oil,
3 eggs, 1 cup milk,
1 tablespoon baking powder,
1/4 teaspoon salt.
Add boiling water to cornmeal and stir until well blended.
Cool. Stir in vegetable oil, well beaten eggs, milk, salt and baking powder.
Mix thoroughly and pour into a well greased baking dish about 7 inches in diameter and three inches deep. Bake in 350 degree oven for 30 minutes or until firm.
Serve in baking dish with melted butter.
