Kentucky Crackling Bread

Scald 2 cups coarse cornmeal with 1 cup boiling water.
Add 1 teaspoon salt and
1 cup cracklings.
Put 1/4 teaspoon baking soda in
3/4 cup buttermilk or sour cream and add to meal mixture.
Form into small pones with fingers and flatten slightly.
Place on a greased baking sheet and bake in preheated 425 degree oven until done and brown.
If necessary turn once during baking.

(Crackling is the cooked fat which is left when pork is cooked or baked.)
