Fried Chicken Kentucky Style

Fried Chicken Kentucky Style: Chicken fried Kentucky style is a delight.
Disjoint a two pound frying chicken, and thoroughly coat each piece with flour which has been seasoned with salt and pepper.
Heat 1 pound lard in a skillet on top of the stove until it is smoking hot (disconnect your fire detectors).
Place chicken in hot fat, reduce heat and cover.
Cook slowly until chicken is brown and tender.
Chicken should be turned over and over during cooking until each piece is uniformly brown.
Remove to a heated platter and serve.
