Vintage Recipe--Fried Chicken

3 pounds of chicken pieces
1/2 cup fat
2 Tbsp butter
1/2 cup flour
1 1/2 tsp salt
1/4 cup water

Wash chicken and pat dry with paper towels. Melt fat and butter over low heat in chicken fryer or large skillet. Combine flour and salt in a sturdy bag. Place 3 or 4 pieces in the bag. Shake to coat the chicken. Put chicken into hot skillet. Repeat until all chicken is floured. Fry over low heat until browned on one side; turn to brown all sides evenly. Add water. Cover and simmer for 30 minutes, adding a little more water, if necessary. Uncover; cook 15 minutes longer.  Makes 4 servings.
