1 cup butter
1/2 cup finely chopped onion
3 quarts soft bread crumbs or cubes
1 cup finely diced celery
1/4 cup chopped parsley1 1/2 tsp salt
1/4 tsp pepper
1 Tbsp poultry seasoning
Drain mushrooms; save liquid. Melt butter in a deep kettle. Add the mushroom and onion; cook until onion is tender but not brown. Add remaining ingredients plus mushroom liquid. Mix lightly. Makes enough stuffing for a 15 pound turkey.
